If I had to eat only one type of food for the rest of my life, Tex-Mex would probably win out nearly every time. Thus, this recipe is one of my favorites. I love the cheesy sauce and slightly sweet flavor of the corn. It is great served alone as a side or as a dip with with tortilla chips. And, personally, I think it is even better than the corn casseroles found in many a Mexican restaurant. All that to say, the next time your serve up a Tex-Mex meal, try this side out. You just might have a new favorite. I know I have! Enjoy!
