When I first married my husband I learned a lot about some different family traditions, one of which being peppernuts. Every year my hubby’s family makes peppernuts to share with friends and family. What are peppernuts? Small little cookies, about the size of your thumbnail. There are many recipes out there but this one is a classic. Beware though, they are addicting!
Chocolate Chip Peppernuts
Course: Desserts
Serves: 8
Ingredients
- 3⁄4 c. brown sugar
- 3⁄4 c. white sugar
- 1⁄2 c. shortening
- 2 c. flour
- 1⁄2 c. flour
- 1 c. chocolate chips
- 1 c. shredded coconut
- 1 c. chopped walnuts
- 1 c. chopped gumdrops
- 2 eggs
- 1⁄4 tsp. salt
- 1 tsp. soda
- 1 tsp. vanilla
- 4 tbsp. buttermilk
Directions
- Cream shortening and sugars. Add eggs and vanilla and beat. Sift together 2 cups flour, salt, and soda. Add alternately with milk to creamed mixture. In a separate bowl mix gumdrops with 1/2 cup remaining flour to keep gumdrops from sticking together in the batter. Next, stir in nuts, gumdrops, and coconut. Chill. On floured board, roll into long slim ropes. Freeze. Cut ropes into small pieces. Bake on cookie sheet at 375 degrees, 5-7 minutes. Enjoy!
