October is National Cookie Month so in honor of a fun holiday I thought I’d share a yummy cookie recipe that is great for now or Christmas, which is just around the corner!
Last year for Christmas we had over 20 people we wanted to share a little Christmas with so we decided to make Gumdrop Cookies. They were so easy to make, and tasted just like Christmas.
How did we use this recipe for over 20 people? Well, to begin, we tripled the recipe. The girls then sponge painted brown paper lunch bags while I took each batch of cookies out of the oven.
Once cooled, we placed a half-dozen cookies in sandwich-sized Ziploc bags, placed them in the sponge-painted bags, and stapled them with a fun recipe card in case the recipients might like to make the recipe again.

Gumdrop Cookies

Ingredients
- 1 c. butter
- 1 c. sugar
- 1 c. shredded coconut
- 2 c. old-fashioned oats
- 1 tsp. baking soda
- 1 c. brown sugar
- 2 c. flour
- 2 eggs beaten
- 2 tsp. baking powder
- 1 c. gumdrops cut into small pieces
- 1 tsp. vanilla
- 1 c. chopped walnuts (optional)
Directions
- Heat oven to 400 degrees.
- Mix ingredients in order, one at a time.
- Drop by spoonfuls on cookie sheet and bake until lightly browned, approximately 10-12 minutes. The cookies freeze well.
