If I had to eat only one type of food for the rest of my life, Tex-Mex would probably win out nearly every time. Thus, this recipe is one of my favorites. I love the cheesy sauce and slightly sweet flavor of the corn. It is great served alone as a side or as a dip with with tortilla chips. And, personally, I think it is even better than the corn casseroles found in many a Mexican restaurant. All that to say, the next time your serve up a Tex-Mex meal, try this side out. Chili Corn Casserole

Ingredients
- 3 cans yellow corn
- 1⁄4 c. flour
- 1⁄2 c. butter
- 8 oz. cream cheese
- 4 oz. green chilies
- 1 tsp. salt
Directions
- Place flour, butter, and cream cheese in a microwaveable container and microwave for 1½ minutes or until the butter and cream cheese melts.
- Stir. Add remaining ingredients.
- Pour into a 8×8 casserole dish.
- Bake 25 minutes at 350 degrees.
