Last week for Valentine’s Day I decided to do something slightly different for my hubby and create cake balls. Mind you I had never made cake balls before in my life but had always heard they were easy so I thought, “Why not?”
I used a strawberry cake mix with strawberry icing so it would be pink on the inside for Valentine’s Day and dipped them in Almond Bark. The result: something too sweet for words! I packaged them up in a cute box and put them in his lunchbox for Valentine’s Day. What a yummy surprise he got to enjoy last Tuesday that let him know once again that I think he’s the best! In addition, I now have a no-fail candy I can actually make! Success!

Prepare and bake the cake as instructed. Let cool. Crumble the cake into a large bowl. Mix with the full tub of icing. Form into 1″ balls and place on a cookie sheet covered in wax paper. Freeze the balls for 30 minutes or more.
Meanwhile, melt the almond bark in the microwave for 1-2 minutes. Stir. Remove the balls from the freezer. Dip cake balls in the melted almond bark. Let cool. Dip cake balls in almond bark again to create a finished second layer. Let cool.
Serve and enjoy!
