There are TWO recipes my family consider go-to snack recipes–homemade trail mix (recipe to come) and energy bites. We LOVE our energy bites and make a recipe at least once every two weeks. In fact, it is not uncommon to hear my husband making fresh peanut butter for this recipe or requesting that I make more energy bites. He likes these…a lot!
Wanting a healthy snack alternative? When you use homemade sugar-free peanut butter, unsweetened dark chocolate chips, and unsweetened coconut, these really are a healthy snack choice that can curb most any desire for munchies. It’s mature enough for the hubs to take to work but also fun enough for the kids enjoy as an afternoon snack. And, if you freeze them before placing them in the lunch box, they also make for a wonderful special treat at school too.
Just this morning my girls had fun getting on the kitchen counter and making this delicious batch. After all, what’s not fun about getting your hands all messy and tasting a few chocolate chips in the process?! All that say, have fun making these and eating them too!
No-Bake Energy Bites

Ingredients
- 3 cup oatmeal
- 1 1⁄2 cup peanut butter (or other nut butter)
- 1 cup honey (or agave syrup)
- 1 pkg coconut flakes (or 1 1/2 c. chia seeds or combo)
- 1 1⁄2 cup ground flaxseed (or wheat germ)
- 1 pkg chocolate chips (or 1 1/2 c. carob chips, raisin, dried cranberries or nuts or any combo therein)
- 1 tbsp vanilla
Directions
- Mix peanut butter, honey and vanilla.
- Add other ingredients and mix until well incorporated.
- Put freezer paper onto two cookie sheets.
- Dampen hands with water and form mixture into balls. Place the balls on the cookie sheets. You will probably need to dampen your hands every 4-5 energy balls to keep the mixture from sticking to your hands.
- Place energy bites in the freezer.
- Once frozen you can store them in the freezer in a gallon freezer bag until eaten.
- **While they don’t have be kept or eaten frozen, we have found this to be the best way to store them both for longevity and to maintain their ball-like consistency. When they are stored, in the refrigerator they tend to get smashed and who wants a smashed energy bite?!
