Peanut Free No Bake Pudding Cookies

I love no bake cookies but peanuts are not something that sets well with me.  As such, I was excited when I found this no bake cookie recipe.  I’ve now been making it for years as it just seems turn out just right every time and tastes as good as those other no bake recipes made with peanut butter.  Enjoy!

Peanut Free No Bake Pudding Cookies

2 c. sugar
3/4 c. butter
1-6 oz. can evaporated milk
1 sm. pkg instant pudding mix (our favorite flavors are butterscotch and chocolate)
4 c. quick cooking oatmeal
 
Bring sugar, butter, and milk to a full boil; boil for 1 minute.  Remove from heat.  Add pudding mix.  Stir.  Add oatmeal.  Stir.   Cool 15 minutes.  Drop on wax paper.  Cool to harden and enjoy!
