Preheat oven to 400 degrees. Sprinkle chicken with seasoning mix. Place 1/2 c. of potatoes on center of 4 greased large foil sheets; top with chicken, salsa, and cheese. Fold foil to cover. Bake 30-35 minutes until chicken is cooked. Let stand 5 minutes before serving. Serves 4.

I’ve never heard of using foil like this! Great idea! I am reading this at night and now, all the sudden, I’m starving! Looks delicious!

Sounds interesting. I love foil packed meals and I LOVE Mexican. I’ve never though of combining with potatos. I’ll have to give it a try the next time my cooking-loving grandchild is visiting. Thanks.
Ummmm, yummy! Have you tried it with pre-cooked rice instead of potatoes?
I’ve tried rice with a different recipe and didn’t like it quite as much. I should try it again with this one though. I imagine it’d turn out pretty yummy too! Good thinkin’.
