Foil Pack Taco Chicken

One of my favorite toss together meals are foil-packets.  You just put everything in foil packets and bake.  I guess you could say they are kind of like slow cooker meals on speed.  Similar prep time but less wait time.  Being one who enjoys Mexican food and down home cookin’ this is one of my favorites.  Even re-warmed as leftovers it still tastes yummy.

Foil-Pack Taco Chicken

 
4 sm. boneless skinless chicken breast halves
4 tsp. Taco Seasoning Mix
1/2 lb. red potatoes, thinly sliced (about 2 c.)
1/2 c. salsa
3/4 c. shredded cheese
 
Preheat oven to 400 degrees.  Sprinkle chicken with seasoning mix.  Place 1/2 c. of potatoes on center of 4 greased large foil sheets; top with chicken, salsa, and cheese.  Fold foil to cover.  Bake 30-35 minutes until chicken is cooked.  Let stand 5 minutes before serving.  Serves 4.
